Fruit Salad

  • 5 clementines 5 clementines, peeled and separated Use fresh clementines for best flavor.
  • 2-3 large oranges 2-3 large oranges, peeled and separated Choose sweet oranges.
  • 2 apples 2 apples, cored and thinly sliced Any sweet apple variety works well.
  • 1 large pomegranate Seeds from 1 large pomegranate Add for crunch and color.
  • 3 kiwis 3 kiwis, peeled and sliced Ensure they're ripe but firm.

Dressing

  • 4 tablespoons 4 tablespoons honey Can substitute with maple syrup for a different flavor.
  • 2 limes Juice of 2 limes Freshly squeezed is best.
  • 1 lemon Juice of 1 lemon Fresh is recommended for tartness.
  • ½ teaspoon ½ teaspoon vanilla extract Adds sweetness and depth.
  • 1 tablespoon 1 tablespoon poppy seeds Provides a nice crunch.

Instructions
 

Preparation

  • In a large serving bowl, combine the clementines, oranges, apple slices, pomegranate seeds, and kiwi slices.
  • In a small bowl or jar, mix together the honey, lime juice, lemon juice, vanilla extract, and poppy seeds until well combined.
  • Pour the dressing over the fruit and gently toss everything together.
  • If desired, sprinkle with extra poppy seeds for a finishing touch.

Serving

  • Serve chilled in small bowls or on a platter for guests.
  • Add a few mint leaves or a dollop of yogurt for extra flair.

Notes

Use ripe but firm fruit so slices hold shape. Make the dressing just before serving to keep fruit fresh. Keep the seeds and citrus segments whole for texture and look.
