Dry Ingredients

  • 1 cup red lentils Rinse well before use.
  • 1 cup oats Use gluten-free oats if needed.
  • 1/2 cup nuts or seeds Optional, use seeds for a nut-free option.
  • 1/2 cup maple syrup Can be swapped for honey if not vegan.
  • 1/4 cup coconut oil, melted Helps clusters hold together.
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • Rinse the red lentils and drain. In a bowl, combine the lentils, oats, nuts or seeds, cinnamon, and salt.
  • In a separate bowl, mix together maple syrup, melted coconut oil, and vanilla extract.
  • Pour the wet mixture over the dry ingredients and stir until well combined.
  • Spread the mixture evenly on a baking sheet lined with parchment paper.

Baking

  • Bake for about 25-30 minutes, stirring halfway through, until golden brown.
  • Let cool completely before breaking into clusters.

Notes

Store in an airtight container at room temperature for up to two weeks or in the fridge for up to one month. Freeze in portions for up to three months and thaw at room temperature before use. Press the mixture lightly on the sheet so clusters form as it bakes. Stir only once halfway to keep larger clusters.
