  • 1 cup sweet and sour sauce Store-bought or homemade.
  • 2 tablespoons soy sauce Adjust quantity to taste.
  • 2 tablespoons vegetable oil For frying the chicken.

  • In a large skillet, heat vegetable oil over medium-high heat.
  • Add the chicken pieces and cook until browned and cooked through.
  • Stir in the bell peppers and pineapple, cooking for another 2-3 minutes.
  • Pour in the sweet and sour sauce and soy sauce, stirring to combine.
  • Let it simmer for about 5 minutes until heated through.
  • Serve over cooked rice.

Notes

For a vegetarian version, substitute the chicken with tofu and mix in different vegetables based on your preferences. Store leftovers in an airtight container in the refrigerator for up to 3 days.
