  • 1/2 cup Pumpkin puree Can use fresh pumpkin if cooked and pureed.
  • 1 cup Milk of choice Dairy or non-dairy milk can be used.
  • 2 tbsp Maple syrup or sweetener of choice Adjust sweetness to taste.
  • 1 tsp Pumpkin spice For added flavor.
  • 1 tsp Vanilla extract Provides added flavor.
  • 1/2 cup Coconut yogurt For topping.
  • 1/4 cup Pecans For topping and caramelizing.
  • 2 tbsp Sugar For candied pecans.

Preparation

  • In a bowl, mix together rolled oats, pumpkin puree, milk, maple syrup, pumpkin spice, and vanilla extract.
  • Cover the mixture and refrigerate it overnight.

Toppings

  • In the morning, top your oats with coconut yogurt and candied pecans.
  • To make candied pecans, toss pecans in sugar and gently heat them on the stovetop until caramelized.
  • Serve immediately and enjoy!

Notes

Serve chilled from the fridge. Great for breakfast or a snack anytime. Store in an airtight container in the fridge for about 3-4 days. Keep toppings separate until ready to eat. Experiment with different toppings and ingredients as desired.
