Ingredients
  

For the crust

  • 1 cup oats
  • 1/2 cup almond flour Can substitute with more oats for a nut-free option.
  • 1/4 cup coconut oil or vegan butter Melted.
  • 1/4 cup maple syrup or agave nectar

For the filling

  • 1 can (15 oz) pumpkin puree Fresh pumpkin puree is recommended for richer flavor.
  • 1/2 cup coconut milk
  • 1/2 cup brown sugar or coconut sugar Adjust sweetness according to taste.
  • 2 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a bowl, mix oats, almond flour, melted coconut oil, and maple syrup to form a crust, then press it into the baking dish.

Filling

  • In another bowl, whisk together pumpkin puree, coconut milk, brown sugar, pumpkin pie spice, vanilla extract, and salt.
  • Pour the pumpkin mixture over the crust.

Baking

  • Bake for 25-30 minutes until set.
  • Let cool before cutting into bars and serving.

Notes

Pumpkin Pie Bars taste great on their own, or you can serve them with a dollop of whipped cream or a scoop of vanilla ice cream. Consider garnishing with a sprinkle of cinnamon for an extra touch. Store leftover bars in an airtight container in the refrigerator for up to five days, or freeze for up to three months.
