  • 1 cup Sugar
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon or to taste
  • 1/2 teaspoon Nutmeg or to taste

Wet Ingredients

  • 1 cup Pumpkin Fresh or canned
  • 2 large Eggs or substitute for vegan option
  • 1/2 cup Melted butter or substitute for vegan option
  • 1/2 cup Milk or dairy-free milk for vegan option

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine flour, baking soda, spices, and salt.

Mixing the Batter

  • In another bowl, beat eggs and mix with sugar and melted butter.
  • Stir in the pumpkin and milk until smooth.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Baking

  • Pour the batter into prepared baking pans.
  • For muffins, bake for 20-25 minutes or until a toothpick comes out clean for cakes.

Serving

  • Let cool before serving, then serve warm topped with a sprinkle of cinnamon or a dollop of whipped cream.

Notes

Use fresh pumpkin for the best flavor, but canned pumpkin works well too. Be careful not to overmix the batter; stir just until combined for light and fluffy results. Adjust the spices to your liking for extra warmth.
