Preparation

  • Preheat the oven to 450°F (230°C).
  • Season the prime rib roast generously with salt, black pepper, garlic powder, and rosemary.
  • Rub the roast with olive oil.
  • Place the roast in a roasting pan, bone-side down, and roast in the preheated oven for 15 minutes.

Cooking

  • Lower the oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches your desired doneness (about 1.5 to 2.5 hours depending on the size).
  • Remove from the oven and let rest for 20 minutes before slicing.

Notes

Prime Rib is best sliced against the grain into thick pieces. Serve with au jus or horseradish sauce and sides like roasted vegetables or mashed potatoes. Allowing the roast to rest keeps it juicy and easy to slice. Use a meat thermometer to check doneness: 120°F for rare, 130°F for medium-rare, 140°F for medium. For variations, consider adding garlic-herb butter or different herbs like thyme or parsley in place of rosemary.
