  • 1 cup Mayonnaise Can substitute with yogurt for a lighter version.

  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Celery, chopped
  • 1 cup Onion, chopped
  • 3 large Hard-boiled eggs, chopped

Preparation

  • Boil the potatoes until tender, then cool and dice.
  • In a bowl, mix mayonnaise, mustard, salt, and pepper.
  • Add diced potatoes, chopped celery, onion, and hard-boiled eggs to the mixture.
  • Stir gently to combine.
  • Chill in the refrigerator for at least 1 hour before serving.

Notes

Use firm, waxy potatoes to help the pieces hold shape. Keep the salad cold and consume within 3 to 4 days for best taste and safety. Optional variations include chopped pickles for tang, reducing mayonnaise with yogurt, and adding bacon bits or herbs for extra flavor.
