  • 1 large egg Replace with flax egg for a vegan option.

Preparation

  • In a large bowl, combine the grated potatoes, cooked quinoa, green onions, breadcrumbs, egg, salt, and pepper. Mix well.
  • Heat oil in a frying pan over medium heat.
  • Form the mixture into small fritters and fry until golden brown on both sides, about 4-5 minutes per side.
  • Drain on paper towels and serve hot.

Notes

Serve with yogurt, sour cream, or a simple salad. Reheat in a pan or oven to keep them crispy. These fritters can be made gluten-free and vegetarian or vegan with substitutions.
