Ingredients
  

Main Ingredients

  • 2 pieces beef tomatoes
  • 250 ml passata
  • 250 g mozzarella (2 balls), cut into thin slices Use dry mozzarella for best results
  • 50 g parmesan Grated
  • 1 bunch fresh basil, leaves removed from stem Add fresh basil after the first bake for best flavor
  • 4 large slices sourdough bread Sourdough gives the best flavor and bite
  • 2 cloves garlic For rubbing on toast before frying
  • 1 tbsp extra virgin olive oil Plus more for frying
  • to taste Salt & Pepper Season lightly as parmesan and tomatoes add salt naturally

Instructions
 

Preparation

  • Preheat oven to 180°C (fan-assisted).
  • Fry the sourdough slices in batches in a frying pan over medium heat with a drizzle of olive oil.
  • While frying, rub the exposed side of each slice with a garlic clove to infuse flavor.
  • Fry each side for about 2 minutes until golden, then transfer to a baking tray.
  • Pat the mozzarella slices with a paper towel to remove excess moisture.

Assembly

  • Place mozzarella slices on the toasted sourdough, followed by a layer of fresh basil leaves and sliced beef tomatoes.
  • Drizzle with extra virgin olive oil and season with salt.
  • Bake in the preheated oven for 15 minutes.
  • Remove from the oven and top each slice with passata (about 2 tbsp per slice), grated parmesan, and a sprinkle of oregano.
  • Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  • Serve immediately, garnished with additional fresh basil leaves.

Notes

Store leftover Pizza Toast in an airtight container in the fridge for up to 2 days. Reheat in a low oven or toaster oven to keep the bread crisp; avoid microwaving if you want to keep the toast crunchy.
