  • 3 ripe tomatoes, chopped Choose firm tomatoes for best flavor.
  • 2 ripe avocados, diced Use ripe but firm avocados to keep pieces intact.
  • 1 small red onion, thinly sliced
  • 1 cucumber, diced Chill for a crisper salad.
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped

Dressing Ingredients

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice Use fresh lemon juice for best taste.

Preparation

  • In a large bowl, combine the chopped tomatoes, diced avocados, sliced red onion, diced cucumber, parsley, and mint.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately for the freshest flavor and texture.

Notes

Serve chilled or at room temperature. To slow browning, keep the dressing separate and add it just before serving. This salad pairs well with grilled meats or warm flatbread.
