Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Wet Ingredients

  • 1 cup milk Use cold milk
  • 1/4 cup vegetable oil
  • 1 large egg Use room temperature

Main Ingredients

  • 1 cup shredded cheese (cheddar or mozzarella) For extra crunch, brush with oil and sprinkle extra cheese before baking.
  • 1 cup diced pepperoni Consider tossing in a little flour to prevent sinking.

Preparation

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, combine flour, baking powder, salt, and pepper.
  • Stir in the shredded cheese and diced pepperoni until well combined.
  • In another bowl, mix the milk, vegetable oil, and egg together.
  • Add the wet ingredients to the dry ingredients and stir until just combined.

Baking

  • Pour the batter into the prepared loaf pan.
  • Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool for a few minutes before slicing and serving.

Notes

Let the bread cool completely before storing. Wrap tightly in plastic wrap or store in an airtight container for up to 3 days at room temperature. For longer storage, freeze slices in a freezer bag for up to 2 months. Thaw and warm in the oven or toaster.
