Ingredients
  

For the sauce

  • 2 tablespoons peanut butter
  • 1 tablespoon miso paste
  • 1 tablespoon gochujang
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

Main ingredients

  • 14 oz firm tofu, pressed and cut into cubes
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1 tablespoon vegetable oil for frying
  • Cooked rice or noodles for serving
  • Sesame seeds and green onions for garnish

Preparation

  • In a bowl, mix peanut butter, miso paste, gochujang, soy sauce, and sesame oil to form a sauce.

Cooking

  • Heat vegetable oil in a large pan over medium heat.
  • Add tofu cubes and cook until golden brown on all sides.
  • Add mixed vegetables and stir-fry for about 3-4 minutes until they are tender.
  • Pour the sauce over the tofu and vegetables, stirring to coat everything evenly.
  • Cook for an additional 2-3 minutes until heated through.
  • Serve hot over rice or noodles, and garnish with sesame seeds and green onions.

Notes

Press the tofu well to remove water so it browns nicely. Stir the sauce until smooth before adding to the pan to avoid clumps. Cook vegetables just until tender to keep some crunch. Pair with small snacks like peanut butter pretzel truffles for a salty-sweet follow-up.
