Main Ingredients

  • 1 whole chicken (1.2 to 1.5 kg) Make sure it's rinsed and patted dry
  • 1 large lemon Squeezed and halves to be placed inside the cavity
  • 1 tbsp oregano Use fresh or dried
  • to taste salt
  • to taste pepper
  • as needed tbsp olive oil For rubbing on the chicken

Preparation

  • Preheat the oven to 200°C (400°F).
  • Rinse the chicken and pat it dry.
  • Rub the chicken with olive oil, salt, and pepper.
  • Squeeze the juice of the lemon over the chicken and place the lemon halves inside the cavity along with oregano.

Cooking

  • Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 75°C (165°F).
  • Let it rest for 10 minutes before carving.

Notes

For best flavor, let the chicken marinate for a few hours or overnight. Baste the chicken halfway through roasting for extra moisture.
