  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef or chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream or milk Use milk for a lighter version.
  • 2 cups uncooked elbow macaroni
  • 2 cups shredded cheddar cheese Use sharp cheddar for stronger flavor.
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika (optional)
  • 1 tbsp olive oil

Cooking

  • Heat oil in a large pot over medium heat.
  • Add chopped onion and garlic; cook for 2 minutes until soft.
  • Add ground beef and cook until browned. Drain excess fat if needed.
  • Stir in broth, diced tomatoes, salt, pepper, and paprika.
  • Bring to a boil, then add macaroni. Reduce heat and simmer for 8–10 minutes, stirring occasionally.
  • Stir in milk or cream and heat gently.
  • Remove from heat and mix in shredded cheddar until melted and smooth.
  • Taste and adjust salt and pepper. Serve hot.

Notes

Serve with extra cheese, chopped parsley, or crunchy croutons. Pairs well with a simple green salad or buttered toast. Use medium heat to prevent curdling of milk and watch cooking time to avoid mushy noodles.
