  • 1 cup soy curls Rehydrated in hot water
  • 2 cups broccoli florets Cut into similar-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil For sautéing
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch For thickening
  • 1 cup vegetable broth Add gradually
  • to taste Salt and pepper
  • Cooked rice for serving Serve hot

Preparation

  • Soak soy curls in hot water for about 10 minutes, then drain and squeeze out excess water.

Cooking

  • In a large pan, heat sesame oil over medium heat. Add garlic and ginger, sautéing until fragrant.
  • Add the soaked soy curls to the pan, followed by soy sauce. Stir to combine.
  • Sprinkle cornstarch over soy curls and mix well. Gradually add vegetable broth and bring to a simmer.
  • Add broccoli florets and cook until they are tender, about 5 minutes. Adjust seasoning with salt and pepper.

Serving

  • Serve hot over cooked rice. Garnish with sesame seeds or sliced green onion if desired.

Notes

Squeeze the soy curls well after soaking for better browning. For crispy broccoli, cook for a minute less and finish with the lid off. Variations include adding sliced bell peppers or using tofu instead of soy curls.
