  • 2 medium Bell peppers, cut into bite-sized pieces
  • 1 lb Potatoes, cut into bite-sized pieces

  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 teaspoons Dried herbs (e.g., thyme, oregano)

Preparation

  • Preheat the oven to 400°F (200°C).
  • Cut the potatoes and bell peppers into bite-size pieces.
  • In a large bowl, toss the sausages, potatoes, and peppers with olive oil, minced garlic, salt, pepper, and dried herbs.

Cooking

  • Spread the mixture onto a baking sheet in a single layer.
  • Roast in the oven for about 25-30 minutes, or until the sausages are cooked through and the vegetables are tender, tossing halfway through.
  • Serve warm.

Notes

Serve straight from the pan for a rustic look. Adding a green salad or crusty bread rounds out the meal. Allow to cool before storing in an airtight container in the fridge for up to 3-4 days.
