  • 4 pieces boneless, skinless chicken breasts Use even-thickness chicken breasts for even cooking.
  • 1 bunch asparagus, trimmed Trim asparagus stems so they cook evenly with the chicken.
  • 3 tablespoons olive oil
  • 2 pieces lemons (juiced and zested) Zest adds bright flavor.
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary Can be replaced with oregano or basil.
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mix together olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
  • Place the chicken breasts in a baking dish and pour the lemon herb mixture over them, making sure they are well coated.
  • Arrange asparagus around the chicken in the baking dish.

Cooking

  • Bake for 25-30 minutes or until the chicken is cooked through and the asparagus is tender.
  • Serve warm and enjoy your meal!

Notes

Add a squeeze of fresh lemon over the top for more brightness. Serve with rice, quinoa, or crusty bread and a simple salad on the side. Marinate chicken for up to 2 hours in the fridge for more flavor.
