  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots, etc.)
  • 1/4 cup teriyaki sauce
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • cooked rice or noodles, for serving
  • sesame seeds, for garnish (optional)

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the garlic and ginger, and sauté for about 30 seconds until fragrant.
  • Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  • Add the mixed vegetables and pour in the teriyaki sauce, stirring to coat everything evenly.
  • Cook for an additional 3-5 minutes until the vegetables are tender.
  • Serve the stir-fry over cooked rice or noodles, garnish with sesame seeds if desired.

Notes

Use any vegetables you prefer; this is a great way to use up odds and ends in your fridge. To make it spicier, add some red pepper flakes. You can also substitute shrimp or tofu for the chicken if you wish. For a different flavor, try adding some pineapple chunks, which pair well with teriyaki.
