Mediterranean Spinach Grilled Cheese

Ingredients
  

For the filling

  • ½ tablespoon olive oil
  • 2 cups spinach leaves Fresh
  • A pinch salt
  • 6-8 pieces sun-dried tomatoes, chopped
  • ½ cup crumbled feta cheese
  • ¼ cup shredded cheddar cheese
  • A pinch oregano
  • A pinch crushed chili flakes

For the sandwich

  • 4 slices bread Choose your preferred type
  • 2 tablespoons butter, softened at room temperature For spreading on bread
  • Honey, optional for serving

Instructions
 

Cook Spinach

  • Heat olive oil in a non-stick pan over medium heat.
  • Add the spinach and sauté for 5–6 minutes until it wilts.
  • Sprinkle with salt, stir, and transfer to a plate. Wipe the pan clean with a paper towel.

Prepare Bread

  • Spread butter on one side of each bread slice.
  • Place two slices butter-side down in the pan.

Assemble Sandwich

  • Arrange chopped sun-dried tomatoes on each bread slice and press so they stick.
  • Top with half the feta, half the cheddar, and the cooked spinach.
  • Add remaining feta and cheddar on top.
  • Sprinkle with oregano and chili flakes.

Cook Sandwich

  • Top each with the second slice of bread, butter side up.
  • Cook over medium heat about 5 minutes until the bottom is golden.
  • Flip carefully and cook another 5 minutes until toasted and cheese is gooey.

Serve

  • Sprinkle with thyme or oregano and chili flakes.
  • Optionally drizzle a little honey and serve immediately.

Notes

Use fresh spinach and drain well after cooking to prevent soggy bread. Cook slowly on medium heat so cheese melts before bread burns.
