Ingredients
  

For the Meatballs

  • 1 pound ground beef Can substitute with ground turkey or pork.
  • 1 cup bread crumbs
  • 1 large egg
  • 1/2 medium onion, chopped

For the Sauce

  • 2 cups mushrooms, sliced Do not overcook to retain flavor.
  • 1 can cream of mushroom soup
  • 1 cup sour cream Heat slowly to prevent separation.

For Serving

  • 2 cups egg noodles Cook according to package instructions.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, combine ground beef, bread crumbs, egg, chopped onion, salt, and pepper; mix well and form into meatballs.
  • Place meatballs in a baking dish and bake for 25-30 minutes, or until cooked through.

Cooking

  • Meanwhile, cook egg noodles according to package instructions.
  • In a skillet, sauté sliced mushrooms until tender.
  • Add cream of mushroom soup and sour cream to the mushrooms; stir until well combined and heated through.
  • Once meatballs are done, mix them into the sauce.

Serving

  • Serve the meatballs and sauce over hot egg noodles and sprinkle with fresh parsley for color.

Notes

Mix meatballs lightly to keep them tender. You can freeze the meatballs plain or in sauce for up to 2 months.
