Ingredients
  

For the Oxtail

  • 1 pound oxtail
  • 4 cups beef broth

For the Mashed Potatoes

  • 2 pounds potatoes Yukon Gold or Russet recommended
  • 1/2 cup milk Can substitute with half-and-half for richer flavor
  • 4 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions
 

Cooking the Oxtail

  • In a pot, cover the oxtail with beef broth and bring to a boil.
  • Reduce heat and simmer for about 2-3 hours until the meat is tender.

Preparing the Mashed Potatoes

  • While the oxtail is cooking, peel and chop the potatoes.
  • Boil the potatoes in salted water until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot.
  • Mash the potatoes with milk and butter until smooth and creamy. Season with salt and pepper.

Combining and Serving

  • Once the oxtail is done, remove it from the broth and shred the meat from the bones.
  • Serve the mashed potatoes topped with the shredded oxtail and drizzle with some of the broth.

Notes

Store leftovers in separate airtight containers for up to 3 days. Reheat gently, adding a splash of milk if necessary.
