Marinated Mozzarella Balls, Artichokes, and Olives

A bright and easy appetizer made with marinated mozzarella, artichokes, and olives, perfect for snacks, party platters, or light starters.

Ingredients
  

For the marinade

  • 1/2 Cup Olive Oil Use good quality olive oil
  • 2-3 Tablespoons Red or White Wine Vinegar
  • 1 Clove Garlic – finely grated
  • 1 teaspoon Dried Italian Seasoning
  • to taste Salt Go easy on the salt
  • to taste Pepper
  • Zest of 1 Small Lemon Lemon
  • Fresh Herbs of Choice (thyme, rosemary, oregano, basil, parsley) Use a mix for a fresh flavor

For the main ingredients

  • 1 Jar Marinated Artichokes – drained, 12oz
  • 8 ounces Mini Fresh Mozzarella Balls in water – drained, Ciliegine
  • 1 1/2 Cups Pitted & Stuffed Green Olives – drained
  • Chopped Pistachios (optional) Add as a garnish if desired

Instructions
 

Preparation

  • Combine olive oil, vinegar, garlic, Italian seasoning, fresh herbs, lemon zest, salt, and pepper in a mixing bowl.
  • Gently toss the artichokes, mozzarella, and olives in the mixture until evenly coated.
  • Allow to marinate for 30 minutes before serving.
  • Serve with an extra drizzle of olive oil and chopped pistachios on top (optional).

Notes

Store in an airtight container in the fridge for up to 3 days but taste best within 24–48 hours. Bring to room temperature before serving.
