Ingredients
  

Burrito Filling

  • 1 cup cooked sausage You can use any type of cooked sausage.
  • 4 large eggs Whisk before adding to the skillet.
  • 1 cup cooked beans Black or pinto beans work well.
  • 1 cup shredded cheese Cheddar or Mexican blend cheese recommended.
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • to taste Salt and pepper
  • Hot sauce Optional, for serving.

Burrito Wrapping

  • 4 large flour tortillas Use warm tortillas to prevent cracking.

Instructions
 

Cooking the Filling

  • In a skillet, cook the sausage over medium heat until browned. Remove and set aside.
  • In the same skillet, sauté the onion and bell pepper until soft.
  • In a bowl, whisk the eggs and add to the skillet. Scramble until cooked through.
  • Add the cooked sausage and beans to the eggs, mixing well. Season with salt and pepper.

Assembling the Burritos

  • Lay a tortilla on a flat surface, place a generous amount of the egg mixture in the center, sprinkle with cheese, and fold the sides over.
  • Heat a clean skillet over medium heat. Place the burrito seam-side down and grill until golden brown, about 2-3 minutes per side.

Notes

Cool burritos to room temperature before storing. Wrap each burrito in foil or plastic wrap. In the fridge, they keep for up to 3 days; in the freezer, up to 2 months. Reheat from frozen until hot.
