Ingredients
  

Main Ingredients

  • 1 whole rabbit, cut into pieces
  • 2 tablespoons olive oil For browning the rabbit
  • 1 cup dry white wine Use a good quality wine
  • 1 can (14 oz) diced tomatoes Canned for convenience
  • 1 cup chicken broth
  • 1 teaspoon dried oregano

Vegetables

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced

Seasoning

  • to taste salt
  • to taste pepper
  • Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat. Add the rabbit pieces and brown on all sides.
  • Remove the rabbit and set aside. In the same pot, add the onion, garlic, and carrots; sauté until softened.

Cooking

  • Pour in the white wine, scraping the bottom of the pot to deglaze.
  • Add the diced tomatoes, chicken broth, oregano, salt, and pepper. Stir well.
  • Return the rabbit to the pot, cover, and simmer for about 1.5 hours, or until the rabbit is tender.

Serving

  • Serve hot, garnished with fresh parsley.

Notes

Cool the stew to room temperature, then place in airtight containers. Refrigerate for up to 3 days. Freeze for up to 3 months. Thaw in the fridge before reheating gently on the stove.
