Ingredients
  

Lentil Mix

  • 1 cup lentils Rinse well before cooking.
  • 2 cups water
  • 1 onion, chopped Adds depth of flavor.
  • 2 cloves garlic, minced Enhances richness.
  • 1 tablespoon ginger, minced Provides warmth.
  • 1 cup mixed vegetables (carrots, peas, etc.) Adds nutrition and color.
  • 1/2 cup walnuts, chopped Can replace with almonds or omit for nut-free.
  • 2 teaspoons garam masala For an authentic taste.
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt, to taste Adjust based on preference.

Topping

  • 1 pack dinner rolls
  • 2 tablespoons oil For sautéing the vegetables.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a pot, heat oil and sauté the onion, garlic, and ginger until golden.
  • Add the lentils, water, mixed vegetables, walnuts, and spices. Bring to a boil, then simmer until lentils are cooked.

Baking

  • Pour the lentil mixture into a casserole dish.
  • Place the dinner rolls on top of the lentil mixture.
  • Bake in the oven for 20-25 minutes until the rolls are toasted and golden.
  • Serve hot.

Notes

Let the casserole cool to room temperature before storing. Keep in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through, or microwave in shorter bursts.
