Ingredients

  • 4 pieces lamb chops (about 1 inch thick)
  • 2 tbsp olive oil
  • 2 cloves garlic, crushed
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried rosemary or a few sprigs fresh
  • 1 piece lemon (optional)
  • 1 tbsp butter for finishing

Instructions
 

Preparation

  • Pat chops dry and season both sides with salt, pepper, and rosemary.
  • Heat oil in a skillet over medium-high heat until hot but not smoking.

Cooking

  • Add chops and cook for 3–4 minutes per side for medium, flipping once.
  • In the last minute, add crushed garlic and butter; spoon melted butter over chops.
  • Rest chops for 3 minutes before serving. Squeeze lemon if desired.

Notes

Use room temperature chops for even cooking. Pat dry your meat to ensure a good sear. Do not crowd the pan; cook in batches if necessary. Let the meat rest to keep juices inside.
