  • 1 bunch kale, chopped Use fresh kale leaves.
  • 1 piece apple, thinly sliced Any variety of apple can be used.
  • 1/4 cup red cabbage, shredded
  • 1/4 cup carrots, shredded
  • 1/4 cup walnuts, chopped Can substitute with other nuts.
  • 1/4 cup raisins

Dressing

  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a large bowl, combine the chopped kale, sliced apple, red cabbage, carrots, walnuts, and raisins.
  • In a separate bowl, whisk together the Dijon mustard, apple cider vinegar, olive oil, salt, and pepper.
  • Pour the vinaigrette over the slaw and toss to combine.

Serving

  • Serve immediately or let it sit for a few minutes to allow the flavors to meld.

Notes

Keep the dressing separate when storing to maintain freshness. Lasts 2-3 days in the refrigerator.
