Main Ingredients

  • 4 cups cabbage, chopped Use a mix of green and purple cabbage for color.
  • 1 cup green peas (fresh or frozen) Add peas last for a bit of bite.
  • 2 tablespoons oil For sautéing.
  • 1 tablespoon mustard seeds For flavor.
  • 2 cloves garlic, minced Adds aroma.
  • 1 teaspoon turmeric powder Provides color and health benefits.
  • 1/4 cup fresh cilantro, chopped For garnish.
  • Salt to taste
  • Water (as needed) To prevent burning.

Instructions
 

Preparation

  • Turn on the Instant Pot and set it to 'Sauté' mode. Add oil and let it heat up.
  • Add mustard seeds and allow them to pop.
  • Stir in minced garlic and sauté until fragrant.
  • Add turmeric powder and mix well.
  • Add chopped cabbage and a pinch of salt. Stir to coat the cabbage with spices.
  • Add green peas and mix well.

Cooking

  • Add a little water to prevent burning, then close the lid.
  • Set the Instant Pot to 'Manual' for 4 minutes.
  • Once cooking is done, do a quick release.

Serving

  • Open the lid, stir in fresh cilantro, and serve hot with rice, dal, or flatbread.

Notes

Cool the dish to room temperature before storing. Place in an airtight container and refrigerate for up to 3–4 days. Reheat with a splash of water to bring back moisture. For variations, add a chopped tomato or a pinch of chili powder for extra flavor.
