Ingredients
  

Filling

  • 1 cup mixed berries (raspberries, blueberries, strawberries) Can use fresh or thawed frozen berries; drain extra juice if very wet.
  • 1 tablespoon sugar Can be swapped with honey for a milder sweetness.
  • 1 teaspoon cornstarch Helps thicken juices from the berries.

Cobbler Topping

  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats Can be swapped for chopped nuts for crunch.
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon Can add a pinch of nutmeg or lemon zest for extra flavor.
  • 4 tablespoons cold butter, cubed Keep cold for a crumbly topping texture.
  • 1/4 cup milk

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine mixed berries, sugar, and cornstarch; set aside.
  • In another bowl, mix flour, oats, brown sugar, salt, and cinnamon.
  • Cut in the cold butter until the mixture resembles crumbs.
  • Stir in the milk until just combined.

Baking

  • In individual baking dishes, layer the berry mixture and top with the cobbler mixture.
  • Bake for 25-30 minutes or until golden brown.

Serving

  • Serve warm and enjoy! You can add a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

Cool the cobbler fully before storing. Cover dishes with foil or plastic wrap and keep in the fridge for up to 3 days. Reheat in the oven at 325°F (160°C) for 8-10 minutes, or until warm.
