Ingredients
  

For the Ribs

  • 1 kg pork ribs (cut into bite-sized pieces)
  • 2 tbsp oil For sautéing
  • 3 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 3 tbsp honey (or brown sugar) Can substitute with brown sugar
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp oyster sauce (optional for richness)
  • 4 cloves garlic (minced)
  • 1 thumb-sized piece ginger (sliced)
  • 1 cup water
  • Chopped green onions (for garnish)

Preparation

  • Bring a pot of water to a boil and blanch the pork ribs for 2–3 minutes to remove impurities. Drain and set aside.

Cooking

  • Heat oil in a large pan or wok. Add garlic and ginger, and sauté until fragrant.
  • Add the ribs and cook until lightly browned.
  • Pour in soy sauce, dark soy sauce, honey, vinegar, oyster sauce, and water. Stir well to coat the ribs evenly.
  • Cover and simmer on low heat for 35–45 minutes, stirring occasionally, until the sauce thickens and becomes glossy.

Serving

  • Garnish with green onions and serve hot with steamed rice.

Notes

Be sure to adjust the ingredients based on your taste preferences. For extra flavor, marinate the ribs in the sauce for a few hours before cooking. Keep an eye on the sauce as it cooks, and stir occasionally to prevent sticking. Variations can include using different sweeteners or adding chili flakes.
