  • 4 pieces salmon fillets
  • 1 cup fresh pineapple, diced Use fresh pineapple for the best flavor.
  • 1/4 cup honey Baste with the marinade for a shiny glaze.
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice Can substitute with lime juice for a tropical flavor.
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Preparation

  • Preheat the grill or oven to medium-high heat.
  • In a bowl, mix together diced pineapple, honey, soy sauce, olive oil, lemon juice, salt, and pepper.
  • Place the salmon fillets in a baking dish and pour the pineapple mixture over the top.
  • Let the salmon marinate for 15-20 minutes.

Cooking

  • Grill the salmon for about 6-8 minutes per side, or until cooked through, basting with the marinade occasionally.
  • Garnish with chopped green onions before serving.

Notes

Cool leftovers to room temperature, then store in an airtight container. Refrigerate up to 3 days, or freeze for up to 1 month. Thaw in the fridge before reheating gently.
