Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts Thaw fully if using frozen chicken.
  • 2 tablespoons honey Can substitute with maple syrup.
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

For the Rice Mix

  • 1 cup cooked rice Brown rice can be used for more fiber.
  • 1 piece avocado, diced Dice just before serving to maintain freshness.
  • 1/4 cup cilantro, chopped

Instructions
 

Marinade Preparation

  • In a bowl, mix honey, lime juice, garlic powder, salt, and pepper to create a marinade.
  • Add chicken breasts to the marinade and let it sit for at least 30 minutes.

Cooking the Chicken

  • Grill or pan-cook the marinated chicken until fully cooked, about 6-7 minutes per side.

Preparing the Rice Layer

  • In a separate bowl, combine cooked rice, diced avocado, and cilantro.

Assembly

  • Layer the grilled chicken on top of the avocado rice mixture to create the stack.
  • Serve warm on individual plates, adding a wedge of lime or extra cilantro for color.

Notes

Store components separately for best texture: keep chicken in one container and avocado rice in another. Refrigerate up to 3 days. Reheat chicken gently and add fresh avocado if it softens too much.
