Ingredients

Shrimp and Marinade

  • 1 pound extra-large or jumbo shrimp, peeled and deveined (tails on or off)
  • 1/3 cup honey
  • 3 tablespoons soy sauce
  • 1 tablespoon minced garlic (from 2 large cloves)
  • 1/2 teaspoon grated fresh ginger
  • 1/8 teaspoon crushed red pepper plus more to taste
  • 1/4 teaspoon cornstarch
  • 1 tablespoon extra-virgin olive oil or vegetable oil

For Serving

  • to taste thinly sliced scallions for serving

Instructions

Preparation

  • Place the shrimp in a large bowl.
  • In a small bowl, mix the honey, soy sauce, garlic, ginger, and crushed red pepper. Whisk until smooth.
  • Pour 3 tablespoons of this marinade over the shrimp and toss to coat. Let it marinate for at least 15 minutes at room temperature or up to 1 hour in the fridge.
  • While the shrimp is marinating, mix the cornstarch with the remaining marinade and set it aside.

Cooking

  • After marinating, lift the shrimp from the bowl and pat them dry with paper towels. Discard any leftover marinade.
  • Heat a large skillet over medium-high heat. Add the oil and swirl it around the pan.
  • Arrange the shrimp in a single layer in the skillet. Cook for about 2 minutes until the shrimp are lightly browned on the bottom.
  • Flip the shrimp and cook for another minute.
  • Add the reserved marinade to the skillet and cook for 1 to 2 minutes, until the sauce thickens.
  • If your shrimp are smaller and already cooked, you can transfer them to a serving dish and reduce the sauce on its own before pouring over the shrimp.
  • Transfer the shrimp and sauce to a serving dish, sprinkle with scallions, and enjoy!

Notes

Serve your Honey Garlic Shrimp over rice or with steamed vegetables for a complete meal. For leftovers, store in an airtight container in the fridge for up to 3 days. Be careful not to overcook when reheating. Dry the shrimp before cooking for better color. Adjust crushed red pepper to taste and let marinate longer for extra flavor.
