  • 2 pieces chicken breasts, diced Use small diced pieces for quick cooking.
  • 2 tablespoons olive oil Divided use.
  • 4 cups cooked rice, preferably cold Day-old rice works best.
  • 1 cup frozen peas and carrots, thawed Mixes well with the rice.
  • 4 cloves garlic, minced For rich flavor.
  • 2 pieces eggs, beaten Scrambled into the dish.
  • 2 tablespoons soy sauce Adjust for saltiness.
  • 1 tablespoon sesame oil For flavor enhancement.
  • 1/2 teaspoon black pepper Season to taste.
  • 1/4 cup green onions, chopped For garnish.

Cooking

  • Heat 1 tablespoon of olive oil in a large pan or wok over medium heat.
  • Add the diced chicken and cook until browned and cooked through, about 5-6 minutes. Remove and set aside.
  • In the same pan, add the remaining olive oil and sauté the minced garlic for about 1 minute.
  • Push garlic to one side and pour the beaten eggs on the other side, scrambling them until cooked. Mix with the garlic.
  • Add cold cooked rice and stir in the peas and carrots. Cook for about 3-4 minutes.
  • Return cooked chicken to the pan and add soy sauce, sesame oil, and black pepper. Stir to combine and heat through.
  • Garnish with chopped green onions and serve hot.

Notes

Use cold, day-old rice for the best texture. Store leftovers in an airtight container for up to 4 days.
