  • 2 pounds beef ribs Browned for flavor
  • 3 medium potatoes, diced Cut into even pieces
  • 1 quart sauerkraut Rinse if less tang is desired
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 medium carrots, diced
  • 1 teaspoon salt Taste and adjust at the end
  • 1 teaspoon pepper Freshly ground preferred
  • 2 leaves bay leaves Remove before serving

Preparation

  • In a large pot, brown the beef ribs over medium heat.
  • Add chopped onion, minced garlic, and diced carrots; sauté until softened.
  • Add diced potatoes and sauerkraut.
  • Pour in beef broth and add bay leaves, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours until the beef is tender.
  • Remove bay leaves before serving.

Notes

Garnish with fresh parsley or a spoon of sour cream to soften the tang of sauerkraut. Serve with crusty bread or a simple sandwich to soak up the broth.
