  • 2 lbs ground hamburger meat
  • 4 large potatoes, peeled and diced Use starchy potatoes like Russets for a thicker broth.
  • 1 large onion, chopped
  • 3 medium carrots, sliced
  • 3 stalks celery, chopped
  • 6 cups beef broth
  • 2 cups shredded cheddar cheese Can substitute with other cheeses like Monterey Jack or Swiss.
  • 1 cup heavy cream For a lighter version, swap with half-and-half.
  • Salt and pepper to taste
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning

  • In a large pot, brown the hamburger meat over medium heat, then drain excess fat.
  • Add the chopped onion, carrots, and celery to the pot and cook until softened.
  • Stir in the diced potatoes and beef broth; bring to a boil.
  • Reduce heat and let simmer for about 20-30 minutes, or until the potatoes are tender.
  • Stir in the heavy cream, shredded cheddar cheese, garlic powder, Italian seasoning, salt, and pepper.
  • Allow the cheese to melt completely and serve warm.

Notes

Hearty Potato and Hamburger Soup is best served hot with crusty bread, crackers, or a simple green salad. Top with extra cheddar or chopped parsley for color. Let the soup cool before storing; it keeps in the fridge for 3–4 days or can be frozen for up to 3 months.
