Ingredients
  

For the Chicken Stew

  • 1 whole whole chicken, cut into pieces Use a whole chicken for best flavor.
  • 4 cups chicken broth Store-bought or homemade.
  • 1 onion onion, chopped Yellow or white onion preferred.
  • 2 cloves garlic, minced Fresh garlic adds the best flavor.
  • 1 cup mixed vegetables (carrots, peas, corn) Frozen or fresh can be used.
  • salt and pepper to taste Salt and pepper Season according to preference.

For the Dumplings

  • 2 cups all-purpose flour Sifted for better texture.
  • 1 tsp baking powder Ensure it's fresh for optimal rise.
  • 1/2 tsp salt More can be added to taste.
  • 1/4 cup unsalted butter, melted Use unsalted to control saltiness.
  • 1 cup milk Any type of milk can be used.

Garnish

  • 1 bunch fresh parsley Chopped, for garnish.

Instructions
 

Preparation

  • In a large pot, add the chicken pieces and cover with chicken broth. Bring to a boil, then reduce heat to simmer for about 30 minutes, or until the chicken is fully cooked. Remove the chicken and set aside.
  • In the same pot, add chopped onion, garlic, and mixed vegetables. Cook until softened. Season with salt and pepper.

Making Dumplings

  • In a bowl, mix flour, baking powder, and salt. Stir in melted butter and milk until just combined.

Cooking

  • Shred the cooked chicken and return it to the pot. Then, drop spoonfuls of the dumpling batter on top of the stew.
  • Cover and simmer for 15-20 minutes, or until dumplings are cooked through and fluffy.
  • Garnish with fresh parsley before serving.

Notes

When serving, ladle the stew into bowls and ensure each serving gets a generous helping of dumplings. Pairs well with crusty bread or a fresh green salad. To store, let it cool completely, place in an airtight container, and refrigerate for up to three days or freeze for up to three months.
