  • 1 lb Italian sausage Use high-quality Italian sausage for best flavor.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian option.
  • 4 medium potatoes, diced For a thicker soup, mash some potatoes before serving.
  • 2 cups kale, chopped Frozen kale can be used.
  • 1 cup heavy cream
  • to taste Salt and pepper
  • to taste Grated Parmesan cheese for serving Serve hot, allowing each bowl to be topped with cheese.

Cooking Instructions

  • In a skillet, cook the Italian sausage over medium heat until browned. Drain excess fat.
  • In the crockpot, combine the cooked sausage, onion, garlic, chicken broth, and potatoes.
  • Cover and cook on low for 7-8 hours or high for 4 hours.
  • About 30 minutes before serving, add the kale and heavy cream.
  • Season with salt and pepper to taste.
  • Serve hot, topped with grated Parmesan cheese.

Notes

Allow the soup to cool completely before storing. Refrigerate in an airtight container for about 3-4 days or freeze for longer storage. Feel free to add extra vegetables like carrots or zucchini.
