  • 1.5 lbs beef stew meat
  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 bay leaf

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add beef stew meat, season with salt and pepper, and brown on all sides.
  • Add onion and garlic; sauté until softened.
  • Stir in mushrooms, carrots, and potatoes.
  • Add beef broth, tomato paste, Worcestershire sauce, thyme, and bay leaf.
  • Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours, or until meat is tender.
  • Adjust seasoning and serve hot.

Notes

Serve hot in deep bowls, topped with fresh parsley or sour cream. Pair with bread or rice, and enjoy the leftovers that often taste better the next day. Brown the meat well for improved flavor and use a heavy pot or Dutch oven for even heat.
