Main Ingredients

  • 1 lb turkey breast, cooked and shredded Use leftover cooked turkey to save time.
  • 1 cup wild rice, cooked Cook the wild rice ahead so it does not get too soft in the soup.
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 2 cups spinach or kale, chopped Swap spinach for kale for a chewier green.
  • 1 cup heavy cream (optional) Add cream at the end and heat gently to avoid curdling.

Preparation

  • In a large pot, sauté onions, carrots, and celery until softened.
  • Add garlic and cook for another minute.
  • Pour in chicken broth and bring to a boil.
  • Stir in shredded turkey, cooked wild rice, thyme, and parsley.
  • Simmer for 20 minutes.
  • Add spinach or kale and heavy cream if using, cooking until greens are wilted.
  • Season with salt and pepper to taste.
  • Serve warm and enjoy!

Notes

Serve hot in deep bowls. Try crusty bread or a light salad on the side. Store in an airtight container in the fridge up to 3–4 days, or freeze up to 3 months.
