Ingredients
  

For the dressing

  • cup olive oil
  • 4 tablespoons freshly squeezed lemon juice For the best bright flavor use fresh juice.
  • 2 tablespoons harissa sauce (or 1½ tablespoons harissa powder) Start with less harissa if you prefer mild heat.
  • tablespoons honey or maple syrup Use maple syrup for a vegan version.
  • 1 small garlic clove, finely minced
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

Preparation

  • Add all ingredients to a jar with a lid or to a mixing bowl.
  • Shake vigorously or whisk for 15–20 seconds until smooth.
  • Taste and adjust lemon, sweetness, or salt as needed.
  • Serve immediately or refrigerate and shake before use.

Notes

Store the dressing in a sealed jar in the fridge for up to 1 week. Shake or whisk before each use because the oil and lemon will separate.
