  • 2 pieces ham Any variety of ham can be used.
  • 2 pieces eggs Cook to desired doneness.
  • 2 medium potatoes Cut into chip shapes.
  • 1 teaspoon salt For seasoning.
  • 1 teaspoon pepper For seasoning.
  • Oil as needed oil (for frying) For frying the chips and eggs.

Preparation

  • Cut the potatoes into chip shapes and soak them in water for at least 30 minutes. Drain and pat dry.

Cooking

  • Heat oil in a frying pan and fry the chips until golden and crispy. Remove and drain on paper towels.
  • In the same pan, add the ham and cook until browned.
  • Fry the eggs in the remaining oil to your desired doneness.
  • Serve the fried ham, eggs, and chips hot, seasoned with salt and pepper.

Notes

Dry the potatoes well before frying to get crisp chips. Use medium-high heat for the ham so it browns without drying. Fry eggs last so they stay hot; season just before serving. Optional variations include swapping ham for bacon or adding herbs.
