Ingredients
  

For the Marinade

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika

For the Steak

  • 1 kg vacio (flank steak)
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions
 

Preparation

  • Preheat the grill to medium-high heat.
  • In a small bowl, mix olive oil, garlic, salt, black pepper, and smoked paprika to create a marinade.
  • Rub the marinade all over the vacio and let it sit for at least 30 minutes.

Cooking

  • Place the marinated vacio on the grill and cook for about 5-7 minutes on each side, or until it reaches your desired doneness.
  • Remove from the grill, let it rest for a few minutes, and then slice against the grain.

Serving

  • Serve garnished with fresh parsley and lemon wedges.

Notes

Cool the steak to room temperature before storing. Place in an airtight container and refrigerate for up to 3-4 days. For longer storage, freeze slices for up to 3 months and thaw in the fridge before reheating. Let the steak rest after grilling to keep juices inside. Slice thin and against the grain for tender bites.
