  • 200 g feta cheese Use good-quality feta for best flavor.
  • 1 cup cherry tomatoes Cut tomatoes in half if they are large for even cooking.
  • 1/2 cup briny olives Swap for capers or sun-dried tomatoes for different brine notes.
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • Fresh basil for garnish Serve warm so the cheese is gooey.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, place the feta cheese in the center and surround it with cherry tomatoes and olives.
  • Drizzle with olive oil and sprinkle with minced garlic, oregano, salt, and pepper.

Baking

  • Bake for about 25 minutes, or until the feta is soft and slightly golden.

Serving

  • Serve warm, garnished with fresh basil, and enjoy with crusty bread or crackers.

Notes

Cool to room temperature before storing. Keep in an airtight container in the fridge for up to 3 days. Reheat gently in a low oven or microwave to keep it gooey.
