  • 1 pound chicken breast
  • 1 tablespoon ginger, minced Use fresh ginger for best flavor.
  • 2 pieces limes, juiced Fresh lime juice is recommended.
  • 4 cups chicken broth
  • 2 cups mushrooms, sliced Slice evenly for uniform cooking.

Additional ingredients

  • 1 cup rice Cook according to package instructions.
  • 1/4 cup cilantro, chopped Stir into rice just before serving.
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • 1 tablespoon olive oil For sautéing.

Instructions
 

Preparation

  • In a pot, heat olive oil over medium heat.
  • Add onions and garlic, sautéing until soft.
  • Add chicken breast, ginger, and lime juice, cooking until chicken is browned.
  • Stir in mushrooms and cook for an additional 3-4 minutes.

Cooking

  • Pour in chicken broth and bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Cook rice according to package instructions.

Serving

  • Stir chopped cilantro into the rice just before serving.
  • Serve the soup hot with a bowl of cilantro rice on the side.
  • Spoon rice into the soup or serve rice separately so each person can mix as they like.
  • Add extra lime wedges or chopped cilantro for garnish.

Notes

Cool the soup to room temperature before storing. Keep soup and rice in separate airtight containers in the fridge for up to 3-4 days. Reheat gently on the stove and add a splash of broth or water if the soup thickens.
