  • 1 head cabbage Use fresh, organic for best flavor
  • 2 pieces apples, grated Any variety works, sweet or tart
  • 1 tablespoon grated fresh ginger Adjust according to spice preference
  • 1-2 teaspoons salt Adjust for taste
  • as needed cups Water To cover the cabbage mixture if necessary

Preparation

  • Shred the cabbage and place it in a large bowl.
  • Add the grated apples, ginger, and salt.
  • Mix everything together and massage the cabbage for a few minutes until it starts to release its juices.
  • Pack the mixture tightly into a jar, leaving some headspace at the top.
  • If necessary, add water to cover the cabbage mixture fully.
  • Cover the jar with a cloth or lid and let it ferment at room temperature for about 1-2 weeks.
  • Taste periodically and store in the fridge once it reaches the desired sourness.

Notes

To store, keep in the refrigerator once it has reached the desired level of fermentation in an airtight jar. Use fresh organic vegetables for best results. Feel free to add other ingredients like carrots or beets for variations.
