Preparation

  • Rehydrate the soy curls according to package instructions.
  • In a bowl, marinate the soy curls in General Tso's sauce for at least 15 minutes.

Cooking

  • Heat vegetable oil in a large pan over medium-high heat.
  • Add the marinated soy curls and stir-fry until crispy, about 5-7 minutes.
  • Add the mixed vegetables and continue to stir-fry until the veggies are tender but still crisp, about 3-5 minutes.

Serving

  • Serve hot over rice or noodles.
  • Garnish with sliced green onions and sesame seeds for extra color and crunch.

Notes

Cool leftovers to room temperature before storing. Keep in an airtight container in the fridge for up to 3-4 days. Reheat in a pan so the soy curls stay crisp. Pat soy curls dry after rehydrating for better crispiness. Do not crowd the pan; fry in batches if needed. Add sauce at the end to avoid soggy curls.
