Ingredients
  

Meatballs

  • 1 lb ground beef or turkey Use a mix for milder flavor
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
  • 2 tablespoons dried herbs thyme, oregano, or basil

Main Ingredients

  • 1 cup rice white or brown rice
  • 2 cups chicken broth or vegetable broth
  • 1 cup frozen peas or fresh peas
  • 4 cloves garlic minced
  • 1 medium onion chopped
  • 2 tablespoons olive oil for cooking

Garnish

  • fresh herbs such as parsley or basil

Instructions
 

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • In a bowl, mix ground meat with salt, pepper, and herbs. Form into meatballs.
  • Brown meatballs in the skillet for about 5-7 minutes.
  • Remove meatballs and set aside.
  • In the same skillet, add onion and garlic; sauté until fragrant.
  • Add rice and cook for a couple of minutes, stirring frequently.
  • Pour in chicken broth and bring to a boil.
  • Return meatballs to the skillet, add peas, cover, and reduce heat to low.
  • Simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
  • Garnish with fresh herbs and serve.

Notes

Cool the skillet to room temperature, then store in airtight containers. Keep in the fridge for up to 3 days. Freeze portions for up to 3 months; thaw in the fridge before reheating.
