Preparation

  • Peel and cube the potatoes.
  • Boil the potatoes in salted water until tender, then drain.

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic and cumin seeds, sauté until fragrant.
  • Add cooked potatoes to the skillet and toss to coat in the garlic and cumin.
  • Pour in vinegar, season with salt and pepper, and toss everything together.
  • Cook for another 2-3 minutes until heated through.
  • Garnish with chopped parsley and serve warm.

Notes

Cut potatoes into even cubes for even cooking. Don't overcook them in the skillet; you only need to heat and coat. For variations, consider adding chili flakes for heat, butter for richness, or lemon juice for a fresher taste. Store leftovers in an airtight container in the refrigerator for up to 3 days.
